Q. Is your desiccated liver tested for arsenic?
A. Yes. Test results utilizing ICP-MA, Inductively Coupled Plasma Mass Spectrometry, reflect trace amounts (.047 ppm) of arsenic. Please note however that any and all cuts of beef (as well as other traditional foods) will contain small amounts of arsenic and other metals. This is not a unique feature of liver since liver is NOT a filter and therefore does not accumulate any more heavy metals than lean meat. Several countries, including the UK and Australia, currently use a 1 ppm limit for arsenic in food. The US has yet to establish firm threshold limits.
Q. Have the cattle been tested for mad cow disease?
A. All Bovine animals processed in the USA are tested for BSE (aka Mad Cow Disease) by USDA Veterinarians prior to being acceptable for use.
SENASA (Argentina's USDA) does this for Bovine animals processed in Argentina as well. BSE has not been found in Bovine animals from Argentina.
Q. Has the blood been removed from the liver before drying?
A. The hepatic artery and vein, the portal vein, the gall bladder and the common bile duct are removed from the livers. Extraneous blood is allowed to drain from the livers before they are packaged, frozen, and shipped from Argentina to the US. As the liver is the major blood filtering organ in an animal, it would be impossible to "remove" all blood.
Q. Is the Desiccated Liver defatted?
A. No, we prefer to offer the desiccated liver in its natural non-defatted state, as we try to keep the product as it would be sourced directly from the animal with minimal processing.
